Classic Lemon And Turmeric Cake
Preheat the oven to 180C and line the tin with baking paper.
Cut up the butter into cubes and add to a large bowl, then add the caster sugar and mix together.
Then grate the zest of 1 lemon and squeeze the juice of a whole lemon in. (make sure to take out any lemon pips)
Then add the baking soda, turmeric, eggs and flour bit by bit. Combine all the ingredients together and mix either with your hands or a wooden spoon.
Chop up the lemon you grated into slices for the decoration.
Pour the mixture into the prepared tin and add the sliced lemon.
Bake for 35-40 minutes until golden.
Leave out to cool in the tin for around 5 minutes before removing to serve.

150g self raising flour
150g unsalted butter
150g caster sugar
3 large eggs
