Grilled Vegetable And Mozzarella On Toasted Bread

METHOD

Grill the sourdough bread with olive oil, salt and pepper. Remove the bread and grill courgettes in salt and pepper.

Add to the bread along with, courguettes, mozzarella and top with radish, dill, lemon and olive oil.

INGREDIENTS

½ courgette, sliced
Handful of dill, chopped
1 mozzarella ball, drained and ripped into chunks
1 sourdough toasted roll
1 radish, sliced
¼ lemon, squeezed
2tbsp virgin olive oil
Seasoning: salt and pepper
